Sodium nitrate (and its cousin additive sodium nitrite) is a common preservative used in cured meat products including bacon, deli meat, and jerky. It has been linked to the development of heart disease and diabetes. This additive has been cut out from some foods due to these concerns.

Sodium bicarbonate, commonly known as baking soda or bicarbonate of soda, is a chemical compound with the formula NaHCO₃. It is a salt composed of a sodium cation and a bicarbonate anion. Sodium bicarbonate is a white solid that is crystalline but often appears as a fine powder.

Sodium sulphate is the sodium salt of sulphuric acid. When anhydrous, it is a white crystalline solid, the decahydrate Na2SO4ꞏ10H2O has been known as Glauber's salt. Sodium sulphate is mainly used for the manufacture of detergents and in the Kraft process of paper pulping.

Sodium Metabisulfite is a white powder with a light odor of rotten eggs. It is used as a preservative in pharmaceuticals and foods.
